Amy's Tomato Jam

This is just plain yummy!!!

5 lbs. Roma or paste tomatoes, cored and finely chopped
3 1/2 c. granulated sugar
1/2 c. freshly squeezed lime juice (4-5 limes)
2 t. grated peeled fresh ginger
1 t. ground cinnamon
1 T. sea salt
1 T. red pepper flakes

Combine all ingredients in a large, stainless steel pot.  Bring to a boil over high heat, then reduce heat to low.  Simmer, stirring regularly, until it reduces to a sticky, jammy mess.  This will take between 1-1/2 and 2 hours. (It took me 2-1/2 to 3 hours!)

Ladle into jars, allowing 1/4" headspace.  Process in a boiling water bath or steam canner for 20 minutes.
