Stuffed Jalapenos



Yummmmmm!!!!

4 oz. cream cheese, room temperature
1/2 c. grated sharp cheddar cheese
6 large jalapenos, halved and seeded*
coarse sea salt and ground pepper

Preheat oven to 450 degrees.

In a small bowl, mix together cream cheese and cheddar.  Season with salt and pepper.  With a small spoon, fill each jalapeno half with about 1 T. cheese mixture.  Place peppers on a parchment-lined baking sheet and bake until cheese is browned and bubbling, about 10 minutes, rotating sheet halfway through.

Serves 6

*Note:  Just make sure you remove every seed and as much rib as possible if you prefer less heat!!

Chicken, Rice and Black-Bean Salad


Ooooh, this was yummy with a freshly roasted chicken, the last of the tomatoes and jalapeno peppers from the garden, and brown rice cooked using the method I just discovered that was featured in the September issue of the Martha Stewart Living magazine.  If I had closed my eyes, I would have thought I was at Chipotle's!!

1 c. brown rice
1 cooked chicken (about 2 1/2 lbs.), shredded (about 4 c.)
1 can (15 1/2 oz.) black beans, drained and rinsed
6 plum tomatoes, quartered lengthwise, seeded, and thinly sliced
1 jalapeno chile (seeds and ribs removed for less heat, if desired), minced
4 scallions, thinly sliced
cilantro, chopped
1/4 c. white-wine vinegar
3 T. olive oil
1/2 t. ground cumin
sea salt & ground pepper

Cook rice according to package instructions or Martha Stewart's food editors' "Better Brown Rice" method.  Spread on a baking sheet; refrigerate until cool.

Place cooled rice in a large bowl; add chicken, beans, tomatoes, jalapeno, scallions and cilantro.  Whisk together vinegar, olive oil, cumin, sea salt and pepper and pour over ingredients in bowl.  Toss to combine.

Jalapeno Poppers


Ooooh, these are good!  One of my sewing customers shared this healthier version of Jalapeno Poppers with me.  I didn't grow any jalapenos this year, but I'm certainly going to grow some next year after trying these!  Thankfully I was able to pick up a few at Root's this week before the season was over.

jalapeno peppers
ricotta cheese
green onions, sliced
shredded cheddar cheese
oregano
fresh garlic, minced
Parmesan cheese

Slice peppers in half; remove seeds and membranes.  Cook in boiling water for 3 min; drain.  Mix together ricotta, green onions, cheddar cheese, oregano and garlic.  Stuff peppers with cheese mixture; sprinkle with Parmesan.  Heat in oven until bubbly.

*Note:  Be sure to remove all seeds and membranes unless you like to torture yourself!
