This is a simpler version of yesterday's salad plus the addition of sun-dried tomatoes; I actually liked it better - sometimes it's best not to have too many competing flavors in a dish!
red quinoa, cooked according to package directions
fresh asparagus, lightly steamed
sun-dried tomatoes packed in oil, chopped
sea salt and pepper to taste
vinaigrette:
oil from sun-dried tomatoes
vinegar
sea salt and pepper to taste
